Our elementary school PTC was looking for a nutrition speaker to address one of our parent meetings.  We wanted what we thought may not exist - not just another nutritionist talking about the five food groups, but a practical chef with current, relevant information on family nutrition and mealtime practices.  On top of all that, we wanted someone who could bring the subject alive with a cooking demonstration.

We found out about Vicki Caparulo and it was a perfect match.  Vicki is thoroughly versed in current research on nutrition and the effect it has on children's health. She has a passion for good nutrition and good cooking, and still somehow manages to never loose sight of the practical constraints facing today's families.

Vicki provided a tremendous amount of thought-provoking and fascinating handouts.  She was a joy to work with (I learned so much!) and was always flexible and responsive in crafting her presentation to meet our needs.

The presentation was a huge success with record attendance and lots of positive feedback.  Truly inspirational!

Connington Wealth Management Group approached Vicki to conduct a seminar on "How to Shop, Eat Healthy in Today's Busy Hectic World".

Vicki was wonderful, she shared useful tips with our clients and explained a healthy approach to shopping and preparing foods on a busy schedule.

We received positive feedback from our clients and they continue to use the food lessons learned that evening along with her great recipes and hints. Three years ago, the Craig Upper School (http://craig-upper-school.tripod.com/) put together a breakfast/lunch program based on the following guidelines: convenient, fast, simple, and cost effective.  These terms usually equate to high sugar, high fat, and highly unhealthy choices for our kids and for the most part, our program was no different.  This prompted us to take a hard look at what our responsibilities were to our students and what we were capable of providing. 

After consulting with Vicki J. Caparulo, a certified culinary professional and nutritionist, we have put together our New Lunch and Breakfast Program. In most cases the changes were subtle.  Her focus was on cost awareness , choices, portion sizes, limiting sugar, adding whole grains, increasing vegetable selections, and most importantly providing a model of healthy eating.  The impact was immediate. The 10AM student “crash” is now a thing of the past. Students are more focused and less lethargic after lunch.  Saturday detention has become a lot less crowded!
